The recipe my Husband asks for.....

I cooked this -kind of made up from multiple recipes- Chicken Parmesan one night a few weeks ago.
Since then, that is all my Husband asks for. He mentions the dish anytime he can, so apparently he likes it...a lot.

I varied the recipes because I didn't seem to ever have ALL the ingredients, so I came up with one I did have all the ingredients for. 
All of the recipes called for different herbs and seasonings. Since I only had one of them handy, I just decided to use the "Italian  Seasoning" I had just gotten - made by Paula Deen.

The recipe is actually pretty simple.

Ingredients:
Chicken breasts/tenders, 4 oz Mozzarella Cheese, 2 tbsp of Parmesan Cheese, 2 cups of Marinara Sauce, 1/2 cups breadcrumbs, 2 tbsp Olive Oil, 2 tbsp Italian Seasoning (or Italian Herbs)


Preheat the Oven to 500 degrees.
Heat Olive Oil in a skillet over medium-high heat.

Mix the breadcrumbs and Italian Seasoning in a shallow dish. Press the chicken into the mixture (all sides), shaking off  the excess. Place the chicken in the skillet, let brown (about 3 mins per side).

(I use about 4-5 chicken tenders, but if you have more people in your family just up the number of chicken tenders/ breasts. The 1/2 cup breadcrumbs could have covered 8 tenders-easily).

Next, place the chicken in an oven proof dish. Spoon the marinara sauce around and over the chicken. Then add the parmesan cheese over the chicken then the mozzarella.


Cover the dish in foil, place in oven and let cook for 10 mins.
Uncover dish and allow to cook for 5 mins.


Done!-I serve the Chicken Parmesan over spaghetti noodles.
